An interesting question I have concerns the Toolbar customization in Mail.app: in the Finder, I can shift click on the little "top-left widget" in the title bar to customize the toolbar. In mail, I have to go to a menu.

The Finder's toolbar is a hack  the Finder's Carbon, and doesn't know of NSToolbars. In Cocoa apps, you customize the toolbar by Command-Option-clicking the toolbar widget. (And Command-clicking/Shift-Command-clicking will cycle/reverse-cycle the toolbar's appearance.)
