I'm just guessing here, but I bet you could create your own toolbar item, give it the Customize label, and set its action to be the runCustomizationPalette: method of your NToolbar.

That said, I don't think you necessarily want to do this. If you want to use a different icon just for the sake of being different, I would advise against it. In general, a good guideline is to avoid breaking consistency unless you've got a really, really good reason.
