I understood as you did, but that's not what happened. If you go to /usr/bin, you'll see that gcc is linked to gcc-3.3. So if you don't want it as your default compiler just issue a sudo gcc_select 3.1. Then when you want to explicitely use gcc-3.3, use the CC, etc flags explained in the readme for the target.
