Finding out when something is selected

Ok, this is a stupid question I know, but I can't figure it out. How do you find out when something is selected/unselected. For example I want to know when a text field loses key view status or whatever so I can put some grey text in it. Also when it is clicked so I can take that grey text out. Also I'd like to know when a window is selected.
