The NSString class documentation is good for a quick list of the
frequently-used encodings, however the CFStringEncodingExt.h header
file is your best bet - it's complete and has a fair number of comments
about alternative encoding names. It is sitting in:
/System/Library/Frameworks/CoreFoundation.framework/Headers/
CFStringEncodingExt.h
On the web you can look at the link below, it has some other info which
might be handy.
