There is no public API to produce these results.

There were examples/demos available from the Cocoa Tips session at WWDC.. it may be available to you on connect.apple.com


When you click on an entry field, the shadow for the box that appears overlaps the fields below it so I'm not sure it's an NSMatrix of any sort. I was thinking perhaps it's a small window that pops up?

Nope, it's all an NSTextView..
