File Recovery

Although I did read the disclaimer about not running pre-release software (i.e. Panther) on a production machine, it did take down some unbacked up iPhotos and purchased music on my home machine when it crashed.

Anyone know of any file recovery software or possible ways to use a Cocoa program to snoop the hard drive directory for deleted files ( assuming the re-install of Jaguar just wiped the directory and not the actual data - again assuming those sectors of disk not yet overwritten).

I am familiar with the FAT in the windows world, is there such a thing in the Mac world and can someone point me to the classes I might use to explore trying to recover these files?
