I've used your examples to excellent effect in a rather complex payroll application... It resulted in deleting hundreds (thousands?) of lines of glue code...
I must say that I was particularly impressed by the demos provided (even as they were, in the rough so to speak)... They clarified several points and demonstrated most if not all of what I needed...

If you are looking for simple example that would appear cover all areas of bindings (ok I'm biased) you should probably look at doing an example of a payroll system (or at least the employee maintenance section) I am using the master-detail pattern so the top half of the screen is a table listing employees with a few additional details (phone, sex, d.o.b., start date) and the detail area has a tabbed pane broken down in to personal, employment, etc...

Hmm, that came across badly...

I've created a number of applications that I hope serve to illustrate the technology, and in particular focus on the technology without anyone having to think too hard about the problem the app itself is aiming to solve. That said, the "problem" tends to be very simple -- creating a list of people's first and last names, for example. This may not appear "convincing" in terms of the actual app functionality...

I'd be interested in hearing others' perspectives (offlist, please, since this has gone rather off-topic) on what constitutes a good example. For those who managed to grab them before they went away, any feedback on my earlier examples would also be welcomed.
