Thank you all for your help. It works well with the command shell when
invoked with NSTask. By the way, is there any argument that I can pass
to tell the application I'm launching to go in front ?

Yes, certainly, by using command-line arguments. Try this from a
shell:
/Applications/TextEdit.app/Contents/MacOS/TextEdit -AppleLanguages
"(fr, en)"
The value, e.g. "(fr, en)", must be an array of strings indicating the
localizations in preference order. The quotation marks are necessary
to protect the value from the shell.
