[newbie] how to do a edit card view as Address Book does?

I am looking for an example and explanation of what is being done in
the Address Book in the way that you edit a card with the red minus
and the green plus symbols, to add and remove data rows. I only found
this link:

but it does not really explain it very well, does anyone know of better?
