Does anyone know what widget Apple uses for the AddressBook's individual editing pane? Looks like it's a custom view they wired up somehow. Is that the case? Is there an easy way to do this ourselves?

You might want to look at the source for Tryst (http://www.trystx.com/). It includes various views which mimic those found in AddressBook. It is presently GPL, although the author is open to licensing offers and the like.
