Document Edit State, Undo and Cocoa Bindings

OK I can't find anything on this in the docs or in the archives (caveat: may
not have used the best search params).

How in the world do you bind the documents edit state when using bindings to
update your data? I'd assume this would be cooked in there, but I can't find
anyway to get this to work.

As an added bonus, how would I get Undo/Redo hooked in as well?
