Hi,
Unfortunately, there is no Cocoa/Objective-C QuickTime API available in Panther. However, according to the WWDC session info that was posted on ADC a few weeks ago, Tiger will include a new framework called QTKit. It doesn't give many details, but it does look promising for Cocoa developers that want to be able to use QuickTime. In the mean time, however, you might consider posting your question to the QuickTime mailing list. You'll likely get more help there.
BTW, Here's the page I was referring to: http://developer.apple.com/wwdc/descriptions/desc-ho.html.
