Hmm- I just looked and mine is red in the same way. Strangely, another Info.plist file in my project is almost identical but doesn't have the "all red" behavior. I copied the all red behavior text and pasted it into the other file and saved it. Not all red. I copied the not-all-red text and pasted it into the all-red file. All-red.
The encodings are the same and the line endings are the same. Both file names end in plist and both files have a "text.xml" file type according to Xcode.
For some reason Xcode wants to colorize the two files differently. Search me!
