I use omnigraffle for all of my mockups. Especially with omnigraffle
4 you have the ability to create a master canvas that is used across
multiple canvas's. You than can use actions to assign them to buttons
to switch between canvas's to mimic functionality.

well, it's not a perfect solution, but OmniGraffle has a GUI Design
palette, which is very easy to use.

I guess my question is how do I create the "screenshot" in Photoshop?
Wouldn't I need a library of prebuilt images for buttons, views
and the like?

It's very easy: in Photoshop you make your "screenshots". Then in
IB you can make invisible buttons for buttons in your
"screenshot" that will load a new image or open a new window or
something. It's very effective for creating demos (sometimes I
think that's why Steve Jobs liked IB so much in the NeXTSTEP
days). ;-)
