I'm trying to figure out a clean Cocoa solution. How can I set it up so my sdef(or scriptsuite) to expect to receive an 'fss '?

Do I need to create a class in my sdef for this? I don't see any existing classes with code 'fss '.

How do I receive the array of fss objects in my command method? It will be the direct parameter, but it's an array of what? Can I set up a Cocoa object to know how to coerce an fss to a path?

What you want to do is to traverse the list descriptor and then try coerce the 'fss ' descriptor to an FSSpec or alias or something like that. Expect to dig a lot in the document above but eventually you'll find it...
