So, I'm just wondering if anyone has any suggestions as to where to actually start.

Also check out the "Cocoa and List Resources" mmalcolm posts to this mailing list periodically. A search through the archives (e.g. via http://www.cocoabuilder.com) should bring one of those up.

In particular, there's Alastair's inofficial FAQ:

	http://www.alastairs-place.net/cocoa/faq.txt

If you're out for a book, the FAQ mentions Hillegass's book, which I personally think is best.
