NSArrayController is not an interface object but a controller, something that manages data exchange between interface elements (views) and the array of data it utilizes (model). In other words not contradiction in claims in what quoted exists.

What does what do? If you mean why the outlet I don't know since I don't have the current edition of the his book. The examples source use of the outlet will give you and idea of why the outlet is defined. So review the examples source code.
