I'm not sure exactly what Apple's policy is about using their icons,
but I'd assume that, at least officially, they oppose it. I can't
imagine them suing an open-source developer for using their icons, but
they might not like it. You might consider posting on a mac
graphics-related forum (maybe macthemes.com) and see if anybody would
be willing to do some icons for free. I know a lot of people do icons
for free just so they have something to put in their portfolio. I know
that Japer Hauser (http://www.jasperhauser.nl/icon/) does a lot of
free icons for open-source programs.
