That is exactly what my problem was; thank you, Olivier!

As it turns out, one of my NSTableView's is inside a split pane, but
once I had the "secret" of click-and-hold-long-enough, I figured out
how to "drill down" to the column headers.  It even feels right, once
you get the hang of it.
