Really, where metal should be used is not where this new look is touching ground on, so it isn't "replacing metal" per say.

but how would I go about trying to make something look and feel similar to Mail?!

It's called the unified title/toolbar look... because that's what it is.

Interface Builder > NSWindow Inspector > Attributes > Unified title/ toolbar look

Is this a general trend in app look and feel do we think?

For applications that shouldn't be using brushed metal, hopefully yes. Brushed metal has a purpose and a place and so do the other looks. Each has unique characteristics that are handy, depending on scenario.
