I know that this functionality exists (or did exist at any rate) for Carbon applications through Navigation Services.  I've been unable to find similar hooks in the Cocoa open panel, though.

    as of Panther you've been able to get notified when the selection in the open panel changes, and you could provide an accessory view that responded to that notification and provided a preview.
