For posterity:

Make sure you're doing things in the correct order. Even after staring at and playing with the project for an entire day I still was missing the fact that the bindings were being setup before the defaults were being registered. How exactly that caused some bindings to work and others to fail, I don't know, but just make sure you do things correctly in the first place and you'll never have to wonder. :)
