I am very familiar with both the July 7, 2005 and October 20, 2005 specifications, as I am the author of FeedForAll Mac, http:// www.FeedForAll.com/ . And at the bottom it is just mentioning the 5 named escape sequences that XML supports. Also, their example show un-escaped (') in them (I do acknowledge that they do have mistakes in them). Also if you download several podcasts you will find that about 50% do and 50% don't escape ('). For more discussion on the iTunes specification you can join Apple's syndication-dev mailing list.
