The iChat application does not run a server itself, it launches
"iChatAgent", a background app, to handle its network communication.
Similarly, iTunes launches its own faceless app "iTunes Helper" to handle
certain operations. The scale of the server being run does nothing to
diminish the benefit of keeping the server and its UI, separate.
