Why do you care? Do you use the preference file outside of your app?
The change from plain XML to binary XML was not triggered by you adding this property to the table view - it was a global change introduced with Mac OS X 10.4. Read the release notes for more info. You could probably also find some discussions on that topic in the list archives around that time.
