One of the links from the PyObjC page has a page with a ton of links
for Cocoa bindings and bridges to other languages and/or frameworks.
Worth checking out and bookmarking, IMO: http://www.fscript.org/

I haven't gone there yet, but I have thought about using one of the

I'm using the Python-Objective-C bindings [1] everyday for the
opensource project I'm working on [2] and I must admit that they
are just stellar, and that's coming from a Ruby fan... ;)
As of today, with the insane amount of CPU power available on
recent machines, I'd say that scripting languages like Ruby and
Python and their associated Objective-C bindings are very serious
alternatives to write full Cocoa applications.
