It's easy enough to find what books there are available for Cocoa, and it's up to authors and publishers to determine the market requirements and viability.

Moreover, all of these:

1) Bindings
2) Cocoa/ObjC memory model
3) Drag and drop
4) AppleScript support
5) 'Core' tech (core-image, core data, etc...)
6) Delegates, protocols, categories, and other ObjC extensions/ weirdnesses
7) A basic overview of all the IB controls, and the delegates needed
8) NSDictionary/NSArray/NSString and their 'Mutable' offspring
9) Adding custom application/document icons
10) Unit testing


are covered in the existing on-line documentation and to a greater or lesser extent in existing third-party books.
