You'd have to write the views yourself or sub-class existing ones and override the drawing methods to render them in your own home-made texture.

BUT - don't. Apple's HIG are there to help make your applications not suck.

Apple's HIG are there to keep Apple apps different from regular apps :-)

I guess that we will have access to the new iApp look in the future, but then Apple will move to their new private look.
