Maybe a bit of an unusual source these days, but the man pages for libldap
are quite useful.
man ldap_add
man ldap_modify
man ldap
I started work on Cocoa wrapper for LDAP. If anybody is interested please
mail me.

Dear Jeff
I recently posted the same query and some kind soul informed me that
the easiest was to use the specification from the OpenLDAP site
(since the Darwin implementation follows that exactly) and then to
reference /System/Library/Frameworks/LDAP.framework from within your
Cocoa project. This should allow you to access the C routines
described in the OpenLDAP spec. Apparently LDAP is so widely
documented that Apple does not bother to do it themselves.

I'm writing a Cocoa application and I now need to access an internal
LDAP directory to access information about people. Is there any
software or sample code available that will allow me to do this
easily from within a Cocoa app ? I have been looking at
OpenDirectory/DirectorySerrvices SDK and that isn't too easy to use
nor do I see how to access an internal LDAP directory without having
it created beforehand using the Directory Access. There has to be
an
easier way to do this.
