Why does Apple use TIFF for their images?

Part of it is probably tradition. I think that tiff files were the native, or at least predominant, image format on NeXT / OpenStep, where Cocoa was born.

Personally, I also prefer to not use lossy compression for regular user interface image resources. I don't think it makes sense to introduce compression artefacts, regardless of how small, in these cases.

Maybe TIFFs are faster to display because they're uncompressed?

While that might be true, I rarely think the difference would matter at all.
