MDSchema Reference is what you're looking for.

MDSchemaCopyAllAttributes

then get the display name/description for the attribute (also in that document)

I want to generate a drop down that allows the user to choose the filetypes and or the metadata items much like the finder search has.

I'm guessing I'm just missing the pertinent documentation. A nudge in the right direction would be appreciated.
