As of someone who has just recently picked up cocoa I can recommend that. Well documented and I had no problem to get it working for newbie like me. Now, if someone could just make a decent ODBC driver for Filemaker Pro...

Unlikely. ODBC requires SQL functionality, and FileMaker doesn't speak SQL. (I'm actually not even sure it has any relational functionality. Does it?)

Filemaker has been relational AFAIK since version 4 (now at 8.5). Latest FileMaker versions (server and advanced client) come with a bundled ODBC driver from Data Direct but I've been having troubles lately to get them work cleanly.
