It's easy. Just double-click a few things in the list at the left of your Xcode window (the "groups and files list"), and some of them will pop up windows with nice settings, and the icon is among them.


If you don't like pub quizzes as much as I do, you may want to just google. I entered "cocoa application icon" and one of the first links was to the "currency converter" tutorial on Apple's web site, which details another way to add your icon. It's a little more low-level than my suggestion above, though.
