Unfortunately your software will still misbehave (in one of my recent
releases: unfortunately crash), and users will blame you for that.
Systems with disabled Helveticas are more common than one would
expect. Apparently some font management software likes to disable
"unused" font sets.
Bottom line: Have a fallback if the font you want isn't available.
