I'm just getting started with Cocoa, and I've read a fair amount of
"getting started with Cocoa" guides. However, all of these tutorials,

stuff. I find this hides all of the nitty-gritty detail that I would
like to understand. I like to know as much as possible what is
happening
behind the scenes, before allowing a GUI to hide it away from me.
This notion that Interface Builder is somehow a crutch and a barrier
to understanding comes up now and then. That might be the case for
other environments, but Interface Builder is an integral part of
Cocoa Application development, not a shortcut for newbies. If you
think eschewing Interface Builder is a purer path to understanding,
you have already missed the point.
If you feel you need to understand what's happening under the hood,
I'd recommend that instead of trying to figure it out from first
principles, start from the "answer" (i.e. use Interface Builder) and
work backwards to learn how Interface Builder based development works
and more importantly, why.
