is there really no handy possibility to talk to webservices using cocoa?

There’s WebServicesCore, which has a C-based API, but could be easily wrapped.

If that’s the “outdated Carbon stuff” you were talking about, you may prefer Brent Simmons’ XML-RPC library: http://ranchero.com/cocoa/xmlrpc/
