In a case like this is probably a good idea to follow Apple's lead. As long as the current shipping version of Mac OS X supports a particular architecture, it probably makes sense for you to support that architecture - To make your sales and support effort less confusing, if nothing else.

That said though, you know your own customers best, so you are in the end most qualified to make this decision.

OmniGroup publishes the statistics that they gather from their software updates:

Very interesting stuff (they only have 3.4% of their users on Core Duos).

If you're using Sparkle for your own software updates, you can use it to collect information about your users, providing input for the type of decision making discussed here.
