I have a client that is interested in purchasing an Epson 5000 with the Fiery RIP. How profilable (is this a word?) is this combination? Epson advertises it as having color management--is this going to get in the way of creating decent profiles,

no

or is it already set up for an ICC workflow?

no

Can it be a stable contract proofer with the implementation of a good profile?

yes

in my experience, at least. once you get the RIP to produce reasonably linear output from the Epson (which is quite easy to do), it's quite profilable.
