I then naturally added these new profiles to the ColorSync folder in my

showed up everywhere except the Color Matching tab in the print dialog

yesterday. Today is today and not yesterday and so the profiles are
being stubborn and will not reappear for me in the >Print>Color
Matching>ColorSync Color Matching Tab.

You shouldn't be using the Color Matching tab anyway -- that won't convert data correctly when it goes out of Photoshop (it's a ColorSync/LaserWriter leftover for applications that let the driver generate PostScript for them). Photoshop generates it's own PostScript, and that data won't be affected by the settings in the Color Matching tab.
