I may not be able to help you regarding the scanning project issues, but....
It sounds like perhaps leaving them the way they are might add a sense of
dimension and reality to the composites.
As for working for less for "non profits": Keep in mind that someone in that
organization is getting paid. Some more than others and their bills
(utilities, etc.) get paid at regurlar rates. Some of the highest paid execs
are with some of the non profits. There is no reason to work for less for
them unless you just want to be helpful. Your work/talent is worth what you
normally charge, I'm sure. Don't tear yourself down for them. You are not a
non-profit organization unless you keep doing work that is not for profit and
then you will be but that won't help you pay your bills.
