Jim, for regular scans - you can set your own endpoints etc, the auto
features are a suggestion...so I presume you mean a 'raw ICC scan' for
profiling or for a high bit ICC workflow or something (you probably also
want to disable grey control, gradation, USM, endpoints etc).
There are two simple general answers (which might require more
exploration):
This is based on the Supreme hardware and oXYgen software - look under
the pref (cant remember where) and turn off auto analysis. Also, scan
using the 'LUT ICC CRT' input/output profile. This does not use the
endpoints or other tables, and provides a raw flat scan in device RGB
(AFAIK, I have not produced a custom profile).
CreoScitex has a very good site, with Shockwave simulations of using
the scanner and for setting up an ICC workflow:
https://ecentral.creoscitex.com/ecentral/training/training_main.asp
This may not be the correct link for the free registration, but you
should be able to find your way there by hacking the URL.
Also download this PDF, which includes ES Supreme oXYgen info:

And finally, this list is a good source for hi end scanning info,
including the Eversmart:
