Yes, its the driver not the printer splitting the channels; and yes, its
possible to access all six (or now even seven) channels of an Epson with a
custom RIP, and control them individually, though you are responsible for
your own screening when you do so; YARC has managed channel access but has
failed to provide sufficiently good screening to go with it. There are few
ICC profiling packages that will work at that level, it is customary to feed
some form of wide gamut RGB (profiled as RGB) to such RIPs, and let the RIP
seperate to the multiple channels. Sending them CMYK files tends to have the
undesirable result of restricting the extended gamut.
