It's not the best way to work by a long shot however, if you are reasonably
sure the display was calibrated and profiled, you could assign the monitor
profile to the scan to convert into a Working Space.

Not sure I understand what you're asking, sorry. Are you saying your RIP
isn't happy with CMYK files with embedded profiles? Once you are in output
space, you don't have to embed the profile as long as you know the condition
of the file.
