When you hit the custom button, you only have access to one set of
Eurostandard ink colours.
Amend the dot gain percentage *only* and you'll get the results that you
expect on proof or press.
Hit the curves button and you'll see that, whatever you choose as your dot
gain percentage, PS adds 4 per cent to the cyan.
This means that if you have a set of values supplied by a printer, you also
have to add an additional 4 per cent to the cyan or your separations will
look really blue.

The problem is that if you add the *correct* print settings for dot gain,
you'll get the *wrong* colours on press.
The adjustment for cyan should be mapped out internally -- not compensated
for by a last minute dot gain adjustment in cyan.
