Eric,
The dry down time will change based on factors such as the ink, the printing
device, if it is a press or a digital printer and the paper.
For example an Epson 5000 print will have a dry down time over 24 hrs, but
an Epson 5500 with pigmented inks will have a dry down time around 10
minutes.
One way to determine the time is to measure a small sampling of colors in
certain intervals of time such as every hour and then compare the
differences in the values. I would use a Spectrophotometer and an
application like Xrites Color Shop or the Gretag measure tool. When the
values of the sample colors measure the same of similar, check the time and
compare it to the time has passed. That time will be the dry down time for
that process.
That one way to approach this issue. Another is to ask the vendor of the
printer or press.
