Thanks to David Macy for providing some essential information that tons
of Fiery documentation fail to disclose, and/or positively misrepresent.
I am still not happy about the proprietary "spontaneous improvements" on
a standard ICC workflow, but after David's valuable explanation I feel
more comfortable about running back to the Docucolor, confident that I
can build a meaningful profile from a correctly printed target. In fact,
I already have these profiles, but since:

CMYK -> Calibration (if "CMYK Simulation Profile: None" is selected)
(i.e. no "default" output profile applied) is impossible to deduce from
the documentation, I mistakenly concluded these would have to be applied
upstream from the RIP. (The targets were printed in exactly this way.)
