First question: Has anybody ells experienced this?
Yes, very common problem with the Epson dye inks.

Second: If so, how do you handle this?
Pick a time when the proof is most likely to be viewed from the time it's
printed (for example, 2 hrs.) and measure your testchart at that same
interval and just assume that after, say 8-12 hrs. from that point, the
proof is going to be suspect as far as a match to press.

Third: Why does this happen? Is it paper or ink?
I've always assumed ink is the biggest factor but it may be worth trying
several papers to see if some suffer less from this problem than others. I'd
grab several small packages/samples of paper and print a simple testchart
and start measuring them at maybe 4 hr. intervals over a period of 48-72
hrs. and compare the data. I've used Gretag's Measure Tool (Compare
function) for this on numerous occasions. It's great for this sort of thing.
The only "solution" seems to be to go to some sort of archival/pigmented
inks. I can tell you that an Epson 5500 that I'm currently testing is like a
ROCK when it comes to ink stability BUT a host of new problems also come
with this combination!
