As with InDesign discussions earlier, Illustrator 10 may allow you to select the proofer type in another part of the print dialog. If RGB is selected there, then you can only select RGB profiles (and vice versa).
I don't have 10 in front of me right now but I suspect this is the culprit. By deleting the printer you may have simply reset this back to a default of CMYK.
