This is because Gretag Macbeth uses relative white when building
profiles, instead of taking the white of the paper into account. There is
an option "Preserve Gray Axis" which will use absolute white for the
perceptual rendering intent only. The result you get is technically
neutral gray (compensating for the bluish paper color from Epson), and
will measure neutral gray as well. But in fact, it looks yellow because
your eye + brain would rather believe gray balance is yellow than believe
the paper is blue. So I rarely use the preserve gray axis option,
although it happens to be the method used in Eye One Match (again for
perceptual rendering only). A number of packages also assume the paper
white reading is actually the color humans see, and you'll end up with
less than desirable (usually neutrals that appear yellow) results -
visually anyway.
